This soft, fluffy bread is filled with gooey mozzarella and topped with fragrant garlic scallion butter. You can make one 23 cm flat round like in the video, or shape smaller rounds for a thicker, taller bread.
Ingredients
Dough
- 250 g (2 cups) all-purpose flour
- 5 g (1½ tsp) instant yeast
- 25 g (2 tbsp) sugar
- ½ tsp salt
- 42 g (3 tbsp) unsalted butter, melted
- 125 ml (½ cup) warm milk
- 1 egg, whisked
- Extra flour for kneading, if needed
Filling
- 250 g lactose-free fresh mozzarella (cut into small pieces)
- You can substitute with regular mozzarella or another good melting cheese if preferred.
Garlic Scallion Butter
- 2 tbsp softened butter
- 1 tsp minced garlic
- 2 tbsp chopped scallions
- ½ tsp salt
- Freshly cracked black pepper, to taste
Optional
- 1 egg for brushing the edges
Instructions
1. Prepare the Dough
- In a large mixing bowl, combine flour, instant yeast, sugar, and salt.
- Add melted butter, warm milk, and the whisked egg.
- Mix until a soft, slightly sticky dough forms.
Transfer the dough to a lightly floured surface. Knead gently, adding a little flour only if necessary. Fold and press the dough with your hands until it becomes smooth and forms a ball.
Place the dough ball onto a baking tray or into a round baking pan/pizza pan.
2. First Rise
Cover the dough with a clean cloth and let it rise in a warm place until nearly doubled in size.
Once risen, gently press it down and flatten it with your hands into a round shape (about 23 cm wide for a flatter bread, or smaller if making a thicker loaf).
3. Score and Add Toppings
Using a sharp blade or knife, score the dough in a crisscross pattern.
If desired, brush the outer edges with egg wash for a golden finish.
In a small bowl, mix softened butter, minced garlic, chopped scallions, and salt until well combined. Spread this garlic butter evenly over the surface of the dough.
Lightly go over the scored lines again with the back of a spoon to deepen them slightly. This makes it easier to insert the cheese.
Place small pieces of mozzarella into the cuts, filling the scored sections generously. Sprinkle freshly cracked black pepper over the top.
4. Bake
Preheat your oven to 200°C (400°F) with top and bottom heat.
Bake for 20–25 minutes, or until the bread is golden brown and cooked through. Oven temperatures may vary slightly.
During baking, some butter may melt and leak onto the tray — this is normal.
5. Serve
Allow the bread to cool slightly, then serve warm for the best stretchy, melted cheese texture.
This bread is perfect as a side dish, appetizer, or snack while still warm from the oven.
